The grease deposited in exhaust hoods or exhaust air ducts in commercial kitchens causes large cleaning costs, strong and unpleasant smells, and increases fire hazard. The treatment by high-energy UV radiation photolysis destroys and neutralizes grease and odour molecules. This safeguards the purity of an exhaust hood and considerably facilitates the cleaning of exhaust air ducts. Where everyday manual cleaning was necessary before, now exhaust air ducts hardly need manual cleaning at all.Brochure: Reduction of kitchen odours and grease
This has been confirmed by the staff of Heraeus Canteen for 4,000 employees.
Process advantages
- No fire hazard due to grease deposition
The process offers the best possible fire protection of kitchen exhaust systems:
- Since the smell has been reduced, a warm air circulation system is possible
- There are no cleaning costs, or they are negligible
- The reduction of lingering grease
- No emission problems, so the official regulations can be fully respected
- Considerably improved hygiene through microbe reduction
- A significant reduction of the kitchen’s downtime, thanks to very quick servicing
The Heraeus Kitchen Control System set has been designed and produced in order to suit specific projects. The proper installation and starting the system is compliant with the requirements of DIN 18869-7 appendix A, „Operating UV systems for Aerosol and Aerosolate treatment“.

Disintegration of „waste products“
Industrial pollution of air by aerosols, highly volatile organic compounds, and exhaust substances, also puts a pressure on the environment and affects human health. Short-wave radiation VUV ( vacuum UV radiation = 185 nm ) is used for generating ozone out of the oxygen from the surrounding air, and also for the activation of ozone in oxidation processes. In that way, UV oxidation disintegrates the pollutant in a stream of air. UV light of 185 nm wave length effectively acts on air. Brochure: Disintegration of waste products
Heraeus vacuum UV emitters are used for disintegrating:
- Odours (in food processing, plants for purifying waste waters, livestock stables, smells)
- Grease
- Solvents and VOC
- Chemicals ( TCE, Perc, ammonia, etc.)
Advantages of UV lamp efficiency for air treatment:
- Requires very little space, 1 Amalgam Vacuum UV lamp instead of 4 to 6 low-pressure lamps
- Time efficiency: at least 10,000 hours thanks to the new long-term coating – reduces maintenance costs
- Surrounding temperature: can be heated up to 80 degrees Celsius; these UV lamps are also suitable for high temperatures
- High profitability, because of small investment and low installation costs, only one UV lamp is required
